Nearly every portable oven can reach 450 °C empty. The difference between them appears on the fourth pizza, when the stone has given up its heat and the base no longer crisps.

Where to buy

Gas, wood or multi-fuel?

Gas is the right answer for weekday cooking: five minutes to a usable stone, no ash. Wood is better on a long weekend evening. Multi-fuel ovens let you choose, at the cost of a bulkier body and an extra burner purchase.

Leaving an oven outdoors in Europe
